1/3 cup Yellow Mustard Seeds
1/4 cup Brown Mustard Seeds
1/2 cup Gordy’s Sweet Chips Brine
1/2 cup DC Brau Citizen Belgian-Style Pale Ale
2 1/2 tbsp. Light Brown Sugar
1 tsp. Honey
1/2 tsp. Coarse or Flaked Sea Salt
Combine mustard seeds, Gordy’s Sweet Chips Brine, and DC Brau Citizen Pale Ale in a medium bowl, and stir to combine.
Cover tightly with plastic wrap, and marinate for 10-12 hours in the refrigerator (until most of the liquid has been absorbed into the mustard seeds).
Transfer ingredients into a food processor, then add brown sugar, sea salt, and honey. Pulse to combine, then process for 2-3 minutes total, until a paste-like consistency is reached.
Transfer mustard into a clean, sterilized jar for storage. Refrigerate for at least 1 hour before using.
