La Capilla

"A twist on a summer classic, the Paloma cocktail, using an unusual ingredient: Gordy’s Fine Cocktail Brine. The resulting drink — named after the Paloma’s birthplace, La Capilla in Jalisco — melds the stuff with mezcal, Curaçao, watermelon and grapefruit." New York Times, T Magazine. Ingredients

  • 1 1/2 ounces Mezcal Amaras

  • 3/4 ounce Pierre Ferrand Curacao

  • 1/2 ounce Gordy’s Fine Brine

  • 1 ounce watermelon juice

  • 1/2 ounce fresh grapefruit juice

  • 1/2 fresh lime juice

  • 1 small watermelon wedge, for garnish

  • Lime, for garnish

  • Maldon sea salt, for garnish

Cooking Instructions

  • Pour the first six ingredients in a shaker tin, add ice, and shake well.

  • Fine strain the drink into a double rocks glass filled with ice.

  • Balance the watermelon triangle on top of the glass. Grate fresh lime zest on top using a microplane, and then sprinkle with Maldon salt. Enjoy.
