Cubano

Ingredients

  • 1/2 cup Red Onion, diced

  • 2 cloves Garlic, thinly sliced

  • 1 lb. boneless Pork Chops

  • 2/3 lb. sliced Ham

  • 1/2 lb. Swiss Cheese (8 slices)

  • 4 Challah Rolls

  • 2 tbsp. Unsalted Butter

  • 4 tbsp. Mustard

  • 1 jar Gordy’s Sweet Chips

  • 2 tbsp. Vegetable Oil

  • Salt + Pepper to taste

Cooking Instructions

  • Heat vegetable oil in a large skillet over medium heat, then add red onion and garlic. Add salt and pepper to taste and cook until fragrant (3-4 minutes), then add pork chops. Cook without moving, until browned, 2-3 minutes, then flip. Cook until done (temperature should reach 140ยบ on a meat thermometer), about 4 minutes longer. Remove from the skillet and let rest for at least 5 minutes. Slice thinly, on a bias.

  • Split rolls and spread each with 1 tbsp. mustard. Layer Gordy’s Sweet Chips (10-12), pork, ham, and then cheese, topping with more Sweet Chips as desired before closing the sandwich.

     

  • Melt butter over medium low heat, then transfer sandwiches to the skillet (you may need to do this in shifts). Flatten sandwiches by layering a heavy bottomed skillet overtop, and cook until the bottom bun is crisp, roughly 7 minutes. Flip sandwiches, layer with skillet, and cook until cheese has melted and sandwich is warmed through. Serve immediately.
