2 cups Celery + Leaves, roughly chopped
2 cloves Garlic
1/2 cup grated Parmesan
3 tbsp. Gordy’s Cherry Pepper Spread
1 tbsp. Olive or Grapeseed Oil
2 tbsp. Butter
Sea Salt + White Pepper, to taste
Warm oil in a medium skillet over medium heat, then add garlic. Sautée until fragrant, 2-3 minutes, then add celery. Add sea salt and white pepper to taste (we suggest generosity with the salt) and cook, stirring, for 5 minutes or until bright green.
Reduce heat to medium-low and add butter. Cook 10-12 minutes, stirring often, until lightly browned and heading towards tender.
Transfer celery and garlic mixture into a food processor, and add parmesan. Pulse until roughly chopped and transfer to a medium bowl.
Fold in 3 tbsp. Cherry Pepper Spread (or more to taste) and serve.
